Tips for reverse engineering OSX programs?

I have an OSX program in PEF format that's linked against CarbonLib (so is using the Carbon UI toolkit). I can throw it into IDA on my Windows PC no problems and that works but I don't have a clue how to go from there. Anyone know how to reverse engineer OSX programs? Or have links to documentation on the OSX libraries of this vintage (CarbonLib, Apple;Carbon;Multimedia, vecLib, AudioUnitFrameworkLib, CoreAudioFrameworkLib).

Also is there a way to figure out what version of OSX this would require?
